Swedish Fruit Crumble Pie, Smulpaj, with home made vanilla sauce is pure heaven! 

This recipe works with blueberries, raspberries, strawberries, gooseberries or any other favourite fruit and berries.

Swedish Fruit Crumble Pie - Smulpaj

Pie Ingredients  (Serves 4-6)

 300 ml wheat flour

2 tbsp granulated sugar

100 g butter

 

Filling:

700 ml fresh or frozen berries

70 ml granulated sugar

1/2 tbsp potato starch (potatismjöl)

 

Vanilla Sauce Ingredients 

2 tsp vanilla sugar (vaniljsocker)

200 ml milk

300 ml cream

2 egg yolks

2 tbsp granulated sugar

2 tsp potato starch (potatismjöl)

 

How To do the Pie

Turn the oven on to 225 C.

Mix flour and sugar in a bowl. Cut the butter into pieces and mix together with your hands until it's a crumbly batter.

Mix the berries with sugar and potato starch in an oven proof dish. If you're using frozen berries, double the amount of potato starch. Spread the crumble on top.

Cook in the middle of the oven for 15-20 minutes.

 

 

 

How to do the Vanilla sause

Put the milk, vanilla sugar and 100 ml cream into a pan. Bring to a boil, then take it off the stove and leave to rest for 10-15 min. Whisk in the egg yolks, sugar and potato starch. Heat the sauce to medium hot, while whisking, until the sauce is thick. Pour the sauce into a small bowl and continue to whisk until it's cooled down. Whisk the rest of the cream in a separate bowl and then stir it into the cold vanilla sauce mix.
