FLYING JACOB


Flying Jacob is a classic Swedish casserole dish, popular in the 1970’s. It’s now getting a well deserved comeback. If you haven’t tried this dish, it might sound a bit crazy to mix chicken, bacon, banana, peanuts and cream all in the same dish – but it does taste really good! Try it!
FLYING JACOB
INGREDIENTS 
Serves 4
400 g chicken breast
1 tbsp cooking oil
150 g bacon bits
Salt and pepper to taste
2 bananas
250 ml double cream
100 ml sweet chili sauce
300 g basmati rice
100 g salted peanuts
Parsley, for decoration (optional)

METHOD
Preheat the oven to 225°C 
Cut the chicken into strips and fry in oil in a frying pan. Season with salt and pepper to taste. Place in an ovenproof dish. Cook the bacon and place on top of the chicken.
Peel and slice the banana and place on top of the chicken.
Stir together the double cream, sweet chili sauce and season with salt and pepper. Pour over the chicken.
Bake in the middle of the oven for about 20 minutes.
Cook the rice according to the packet instructions.
Sprinkle the peanuts over the chicken and serve with rice.
