Apple & Cheese Muffins

These spicy savoury muffins is the perfect treat for the family brunch, or the afternoon fika break.
Apple & Cheese Muffins

Ingredients

 

Approx. 12 muffins

 

250g plain flour
21/2 tsp Baking powder
70g Rolled oats
240 ml Whole milk 
3 Large eggs
1/2 tso Fine sea salt
1 Generous tsp Grain mustard
A pinch cayenne pepper
2 Tbls Chopped Chives
2 Dessert apples
200g Grated mature hard cheese such as Västerbottensost cheese

HOW TO

 

- Preheat the oven to 200C. Line a muffin tin with muffin cases.
- Sift the flour into a bowl and then add the oats, cayenne, baking powder and salt. - Peel one apple and dice finely.
- In another large bowl crack the eggs and whisk lightly and then pour in the milk, add the grated cheese, grain mustard, chopped apple and chives. Stir to incorporate.
- Now add the flour mixture and stir until combined, don’t over mix. Divide the mixture into 12 cases and bake for approximately 20 minutes or until golden brown. - Serve warm and best
eaten on the day of baking.
